I made the most amazing meal the other night for dinner and I wanted to tell you about it ASAP. It's vegan and was so flavorful! I use all organic produce because they contain more nutrition and taste better than conventionally grown produce. Here it is:
mixed or mesclun greens chopped (however much you want)
1-2 heirloom tomatoes
freshly shredded carrot
1 clove of garlic freshly pressed into salad
*toss all the ingredients in a large bowl with a little extra virgin olive oil, white balsamic vinegar, pink Himalayan sea salt, and fresh ground pepper.
Susie's Scarlet Quinoa (serves 2-3 *this is another version of my Scarlet Millet)
In a small pot bring 1.5 cups of water to a boil. Add 1 cup of well rinsed quinoa (follow the cooking instructions on the package)
5-6 medium beets (8 small beets or 3-4 large beets) chopped into 1/2" pieces. Place in a pot and cover with water. Cook at medium heat until tender (about 25 min or so).
freshly chopped dill
freshly chopped parsley
1/3 finely chopped yellow or purple onion
*The trick to the dish is to allow the quinoa to cool off a bit so that the grain begins to separate. Toss all ingredients in a large bowl and add extra virgin olive oil, small amount of white balsamic vinegar, and S&P to taste. The best salt for us humans to consume is Celtic Sea Salt or pink Himalayan salt (my fav!). Top off your dish with the second half of your avocado :)
Make sure to eat your salad first as it helps usher what you consume after the salad through your digestive system easier. Remember that weight=waste and the last thing you want is for your meal to sit in your gut for a long time.
