Lazy Antipasto Salad
It's Friday and the weekend is upon us so I thought I'd share a deliciously lazy lunch that I recently made. There's not much to it, no cooking involved, and it was still so darn tasty! I figured it was perfect for a lazy weekend.
Anyone else get lost in the antipasto bar at the grocery store? As an olive lover, I usually make my way over there when shopping at Whole Foods (they have an INCREDIBLE olive bar) and have a hard time deciding with ones to get. Everything always looks so wonderful so I walk around, taste a few things and think about what dishes I can make with what I śee. My husband, Matt, ends up looking super annoyed because I take so damn long to make a decision. Matt gives me a "hurry up I'm bored" look, and that always lights a flame under my butt, LOL!
On this occasion, I purchased stuffed grape leaves, marinated gigante beans, marinated artichokes, and giant garlic-stuffed olives. I also picked up a can of dolmas, mixed greens, and sprouts to make a VERY simple salad that I ended up topping with the gigante beans, sea salt, fresh pepper, extra virgin olive oil, and lemon juice.
...and that was it! I was feeling lazy (hence the title of this post) and didn't feel like cooking or fussing about lunch so this dish emerged. I must say that the flavors were all wonderful together and I thought that I could easily make this dish into a platter to bring over to a summer BBQ, girls night, or family get-together : )
- Stuffed green olives
- Marinated artichokes
- Marinated gigante beans (feel free to use garbanzo or any other type of beans)
- Mixed greens
- Extra virgin olive oil
- Sea salt or, my fav, Himalayan salt (contains more minerals)
- Fresh ground pepper
- Fresh lemon to squeeze on top
