Happy Superbowl Sunday everyone!
Whether you're rooting for the New England Patriots or the Philly Eagles, one thing is for sure...you WILL be eating loads of snacks today while watching the game so I thought I'd share one of my all-time favs that just got even better thanks to my vegan secret weapon! (keep reading to find our what it is)
Who doesn't love fresh guacamole? Am I right?
I’m totally obsessed with avocados and eat at least one every day. Cut it open and sprinkle a little Himalayan salt on it and I'll eat it right out of it's skin with a spoon! Yum!
I mean--how deliciously creamy does this fresh guacamole look?! If you're looking for a last minute addition to your Super Bowl spread or are still looking for something yummy to bring to a party, look no further! This easy guacamole recipe is TO DIE FOR and I promise that you'll be making it more often that you think!
INGREDIENTS (serves two)
***Mix everything in a large bowl and serve with veggies and/or your favorite tortilla chips! It's that easy!
- 3 avocados
- 1/4 cup chopped cilantro
- 1/4 cup chopped purple onion
- Juice of 1/2 lime
- Himalayan salt (to taste)
- Fresh ground pepper (to taste)
- Red pepper flakes (to taste)
- 1 TBSP Follow Your Heart Soy-Free Vegenaise (my secret weapon!)
As with any recipe, if you have a food allergy or don't like some of the extra's I put in this one, like pepper flakes for example, feel free to omit it. I keep my #SuzEats recipes simple and fuss-free for a reason. I want you all to love the healthy food you're eating and not feel burdened by it!
I LOVE fresh herbs and legit put them on every salad and in almost every dish I make, so when it comes to cilantro, I tend to put more in my guacamole than most people do. The health benefits of cilantro are great too! Cilantro is loaded with vitamins A, C, E & K, potassium, folate, calcium and magnesium. Fresh herbs in general are super healthy for you and add so much flavor to salads and dishes so go crazy with them!
